Oatmeal Raisin Chocolate Bomb Cookies

The perfect crunchy yet soft confection with raisins and chocolate galore


This delicious dessert is easy to whip up and is totally customizable. With a delicious caramel-ly base, this versatile dough can feature whatever add-ins you like! Try white chocolate and cranberries for a holiday touch, or walnuts and milk chocolate.

Ingredients

  1. 1 1/2 sticks (3/4 Cup) Unsalted Butter, room temp (brown your butter if you're feeling fancy....trust me!)

  2. 1 C Light or Dark Brown Sugar

  3. 1/4 C White Granulated Sugar

  4. 1 T (YES, TABLEspoon) vanilla extract

  5. 2 Eggs

  6. 1 t Kosher Salt

  7. 1/2

  8. 1 1/2 t Baking Soda

  9. 3 C Rolled Oats

  10. 1 1/2 C Flour

  11. 1 C raisins

  12. Chocolate of choice (measured with love- I recommend 3/4 C Semi-Sweet)



Procedure

Begin by combining the softened butter and sugars until light and fluffy. Dowse that batter in the tablespoon of vanilla and crack in an egg. Mix. Crack in the other egg and stir.


Stir in the salt and baking soda. Mix in your oats, 1 cup at a time, until homogenous. Add the flour and stir until a sticky yet uniform dough forms.


Now you can get creative! Add in whatever mix-ins you like. This is your chance to make these cookies fun and exciting-make something new every time!


Let your delectable dough chill in the fridge for at least 30 minutes to two hours.


Preheat the oven to 350 degrees. Seperate dough into 12 large cookie dough balls, 16 medium, or 20 smaller balls of dough depending on how many cookies you like. We like 'em big over here in 238!


Bake for 20-22 minutes - until lightly toasted on top. Allow to cool and then dive on into this delicious dessert!
